Allah Hafiz.” 🌿🤍 Barley Quinoa Mixed Veg Khichdi 🌱 Ingredients: ½ cup barley (soaked for 2–3 hours if possible) ¼ cup quinoa (washed well) 1 cup frozen mixed vegetables 1 onion (sliced/chopped) 1 tomato (chopped) 1–2 tsp ginger garlic paste (optional) 1–2 green chilies (optional) ½ tsp turmeric powder 1 tsp cumin seeds Salt as per taste Black pepper or red chili powder (optional) 1–2 tsp ghee/oil Water as required Method: 1. Wash barley and quinoa properly. 2. Heat ghee/oil in a pressure cooker. Add cumin seeds and sauté onion until slightly golden. 3. Add frozen mixed vegetables and sauté for a few minutes. 4. Add chopped tomato, turmeric, salt, and spices. Cook until tomato softens. 5. Add soaked barley and washed quinoa. Mix everything well. 6. Add water according to your preferred consistency (more water for a softer khichdi). 7. Close the lid and cook for 3–4 whistles on medium flame. 8. Let the pressure release naturally, mix well, and serve hot with ghee, yogurt, pickle, or salad.
