A good Khaki Campbell duck lays around 300 eggs a year, each egg is bigger than a hen's, and gram for gram it carries about twice the iron and six times the vitamin B12. Yet about 93 of every 100 eggs on Earth come from chickens. So why don't we eat duck eggs everywhere?
In this video we follow Adele Campbell and the record-breaking ducks of the 1930s, the wire cages built for hens, the duck-egg salmonella warnings from the 1930s to the 2010 UK outbreak, the Chinese farm manual from the year 544 that already told you how to salt duck eggs, and the kitchen science that makes a fried duck egg turn rubbery. Then we look at the whole chain built around one bird: egg cartons, grading machines, 21-day hatcheries, chick sexing, water-hungry ducks in dry barns, the duck herders and balut makers of the Philippines, and the breeding companies behind almost every laying hen alive today.
