Tried making fancy frangipane babka , chutki baja ker ho jata MAGAR– first dough didn't rise (RIP) so I turned it into cinnamon sticks instead (total win!). Second dough looked perfect but... surprise! Frangipane was a bit too excited and escaped everywhere 😆 KABHI KABHAR aap ajeeb harkaten ker detey hain, hay na?? Still, the house smelled amazing, the kids were happy, and the bread? Deliciously imperfect.🙏🤍behno, life bhi imperfect hi hy!! Also cooked a simple Pakistani lunch and headed to the mall for some gift shopping – sharing a glimpse of this cozy Canadian day from a Desi mom’s lens. 💛 Sometimes things don’t go as planned, but that’s where the real fun (and flavor!) begins. Grab a chai, slow down, and join me in my warm little chaos ✨Alhamdulilah for everything 🫶 📌 Recipe: Frangipane-Inspired Babka with Walnuts & Oats (Real-Life Edition) Cooked (and saved!) by Sabeen 🇵🇰🇨🇦 🕒 Total Time: 2.5–3 hours 🔥 Bake Time: 30–35 minutes 🧾 Ingredients For the Dough: 2 cups all-purpose flour (250g) 1¼ tsp instant yeast 2 tbsp sugar ¼ tsp salt 1 egg ⅓ cup warm milk (80ml) 3 tbsp unsalted butter, softened (40g) Optional: ½ tsp vanilla extract For the Filling (my improvised version!): ½ cup ground almonds 1/2 cup rolled oats & walnuts mixed 5 tbsp unsalted butter, softened ½ cup sugar (or to taste, ~80–100g) 1 egg ½ tsp almond or vanilla extract 🍞 Instructions Make the Dough: Mix flour, yeast, sugar, and salt. Add egg and warm milk. Mix into a rough dough, then add butter. Knead for 8–10 mins until soft and elastic. Cover and let rise for 1–1.5 hrs (or until doubled). My first dough didn’t rise — kitchen was cold! Try putting it in a slightly warm (turned-off) oven or warm spot. Or check Yeast if it is active before mixing dough. Prepare Filling: Cream butter and sugar, then mix in the egg and extract. Stir in ground walnuts and oats. My filling was runny — next time I’ll chill it 15–20 mins before using. Assemble the Babka: Roll dough into a rectangle. Spread filling, leaving a small border. Roll into a log, slice it lengthwise, twist, and place in a greased loaf pan (or on a tray). Mine spread out on the tray — still tasted amazing though!( use a loaf tin for a better shape) Rise & Bake: Let it rise 30–45 mins. Bake at 350°F (180°C) for 30–35 mins or until golden. Optional: Brush with sugar syrup after baking for shine. 💬 Notes: This didn’t go “perfectly” — the filling ran out, the dough flopped at first — but I saved it with cinnamon sticks, and the second batch was still delicious! Sometimes baking is messy, but the results are still full of flavor 💛 👉 Save, tweak, and try your version!
