There is a machine in California that pulls water straight out of the Pacific Ocean, strips the salt out, and delivers it to people's taps. It works. It runs every day. And it is one of the most difficult things humans have ever built. As a water tester who has spent years measuring what is in rivers, wells, and rain, nothing in my career has humbled me like seawater. Taking the salt out of the ocean sounds like the simplest problem in the world—boil the water, catch the steam, drink it. Yet with all of our modern technology, desalination still only provides about one percent of the world's drinking water.
