There are countless foreign chefs around the world cooking French, Italian and Japanese food. But in China itself, foreign chefs who have devoted themselves seriously to Chinese cuisine remain extremely rare. Michael Janczewski is one of them.
Michael is a Polish chef and the co-founder of Bastard, a Chinese restaurant hidden down a Shanghai lane. After years cooking in Hong Kong and traveling around China, he has learned not just Chinese techniques, but some of the thinking behind them, and begun using that knowledge to create dishes of his own, from a unique take on mapo tofu to charcoal-roasted char siu finished with longan honey.
