Prepare the beef kebabs Finely chop the onion, garlic and green chillies. Add them to the beef mince with a little olive oil, cumin, paprika, salt and black pepper. Mix everything together thoroughly. Mould the beef mixture firmly around the skewers, ready for the grill. 2. Grill over the fire 🔥 Place the kebabs on the hot grill and let them sizzle away for around 10 minutes, turning regularly until browned and cooked through. Cooking time will vary depending on the thickness of your kebabs and the heat of the fire. 3. Make the Greek salad 🥗 Chop the plum tomatoes, red onion and cucumber. Add the crumbled feta and chopped fresh coriander. Squeeze over fresh lemon and lime juice, drizzle with a tablespoon of olive oil and toss everything together. 4. Mix the mint yoghurt sauce 🌿 Add the Greek yoghurt, mint sauce, grated cucumber, lemon juice, salt, black pepper and sugar to a bowl. Mix well until creamy and combined. 5. Flame-grill the tortillas 🌯 Brush the tortilla wraps with a little olive oil and place them on the grill until lightly toasted and warmed through. 6. Build your kebabs Fill the warm tortillas with the smoky beef kebabs and a few spoonfuls of fresh Greek salad. Add the creamy mint yoghurt sauce and homemade chilli sauce to taste. Finish with fresh mint and coriander for the perfect fresh, spicy and smoky combination! 🔥 Simple ingredients. Open-fire cooking. Big flavour.
