Today I’m making Momo’s Chicken Salad, one of my mother’s favorite summer recipes and one that brings back so many memories for me. I started with a slow-growth heirloom chicken and made a rich homemade broth with onion, garlic, tarragon, celery seed, and Celtic salt. After letting the chicken sit overnight in its own broth, I used the tender meat to make a sweet and savory chicken salad with celery, pecans, curry, grapes, raisins, and plenty of mayonnaise. This is a no-measure, taste-as-you-go kind of recipe — the kind our mothers and grandmothers made with love. The broth turned out golden and rich, with beautiful gelatin from the bones, skin, and connective tissue. I let nothing go to waste, from the broth to the chicken skin. This recipe is simple, comforting, and full of memories. As soon as I tasted it, it took me right back to my mother (yes, I cried again!) It hit me hard!!!
