What gives a rye sourdough bread that quintessential Danish rye bread taste? Barley malt syrup plus rye flour. Valnøddebrød, Danish walnut bread, is usually a dark, crispy loaf with a soft crumb and plenty of walnuts. I wanted to push mine further toward a real Danish rye bread, so barley malt syrup and a good dose of whole grain rye went into the dough. Dark, crispy, and packed with walnuts, this one is a keeper.
