Jarda Biryani | Unique Sweet Biryani with Mawa, Gulab Jamun & Pineapple
A unique and beautiful Jarda Biryani made with fragrant sela rice, soft mawa, Gulab Jamun, juicy pineapple, dry fruits and saffron. This sweet rice dish is layered like a biryani and finished on dum for a soft, moist and aromatic result.
The combination of mawa, Gulab Jamun, pineapple, coconut and dry fruits gives every layer a delicious twist. Perfect for special occasions, celebrations and anyone who loves traditional Indian sweet rice recipes with a unique touch.
Ingredients
For Rice
400 g sela rice
1.5 litres water
2 small cardamoms
For Dry Fruits & Mawa
2 tbsp ghee
2 tbsp chopped cashews
2 tbsp chopped almonds
1½ tbsp finely chopped pistachios
25–30 raisins
200 g mawa
180 ml sweetened condensed milk
½ tsp cardamom powder
For Flavoured Ghee
3 tbsp ghee
2 small cardamoms
3 cloves
1-inch cinnamon stick
For Layering
½ cup milk
¾ cup sugar, divided between the layers
Gulab Jamun
Pineapple pieces
Fresh coconut slices
Dry cherries
Saffron milk
1 tsp kewra water
Method
1. Soak 400 g sela rice for 4–5 hours.
2. Boil the soaked rice with about 1.5 litres of water and 2 small cardamoms. Cook the rice 100% fully and then drain the water.
3. Heat 2 tbsp ghee and lightly roast the chopped cashews, almonds, pistachios and raisins until lightly golden. Remove and keep aside.
4. In the same remaining ghee, add 200 g mawa. Gently cook until soft and slightly loose. Do not brown it.
5. Add 180 ml condensed milk and mix well. Add ½ tsp cardamom powder and the roasted dry fruits. Mix for 1–2 minutes and switch off the flame.
6. For the flavoured ghee, heat 3 tbsp ghee with cardamom, cloves and cinnamon until aromatic.
7. Add this flavoured ghee to the cooked rice and gently mix so the ghee coats the rice evenly.
8. In a heavy-bottomed kadhai, add ½ cup milk and make the first layer with about 1 inch of rice.
9. Spread some sugar over the rice, followed by another layer of rice.
10. Spread the prepared mawa mixture over the rice.
11. Place Gulab Jamun over the mawa, followed by pineapple pieces and fresh coconut slices.
12. Add the remaining rice and make another layer. Spread the remaining sugar over the top.
13. Add dry cherries and fresh coconut slices. Pour over the saffron milk and add 1 tsp kewra water.
14. Cover tightly with aluminium foil and place on low flame for 20–25 minutes.
15. Once done, gently open and serve the beautiful, soft and fragrant Jarda Biryani.
Important Tip
For rice-based sweet dishes, always use slightly thicker rice such as sela rice and make sure the rice is 100% fully cooked before layering. This helps keep the rice soft and prevents it from breaking easily.
