In carbohydrate chemistry, epimerism & enediol formation is one of the basic foundation of carbohydrate biochemistry. Epimerism is one of the type of optical isomerism in which 2 optical isomers differ with respect to only one of the carbon centre. Enediol formation results in the reducing property of carbohydrates. Open chain form of carbohydrates in the presence of alkali form enediol which is a very good reducing agent & this forms the basis of identification of carbohydrates.
