After Touring Lebanon, It’s Time to Taste! Choosing Kaak Al Manara’s 10 New Creations

We toured Lebanon, drove hundreds of kilometers, visited bakeries, tasted traditional recipes, met the people behind them, and searched for flavors that could inspire something new. Now, the journey comes back to the kitchen. Chef Nour is back in Dubai, and after weeks of research, development and trials, the food is finally ready to taste! The mission is simple but challenging: celebrate Kaak Al Manara’s 10th anniversary with 10 new creations — 10 items, each with its own story and inspiration from Lebanon. We started with around 15 to 20 ideas, but only 10 can make the final menu. In this episode, we sit around the table, taste, discuss, criticize and refine every creation. Some recipes stayed very close to what we discovered in Lebanon, while others had to be adapted without losing the soul, flavor and emotion of the original. On the tasting table: Lebanese lahm bi ajeen, the eggplant and pomegranate molasses combination we discovered in Bourj Hammoud, Tripoli-inspired kaak with Akkawi and mixed cheeses, traditional Lebanese zaatar, purslane, spinach, pomegranate molasses and more. This is where the road trip becomes a menu. From the streets, bakeries and villages of Lebanon to Chef Nour’s kitchen in Dubai — now comes the hardest part: which 10 creations deserve to make the final cut? . .
