Beef caldereta is a rich Filipino meat stew that originated from Spanish colonial influence, evolving from traditional lamb or goat stews into a localized comfort food using readily available meats like beef. The word "caldereta" comes from the Spanish word caldera, which means cauldron or large cooking pot used for slow-simmering stews. Spanish colonizers brought basic stewing techniques and tomato-based recipes to the Philippines during over three centuries of colonization. Because lamb was scarce, early Filipinos adapted the recipe using locally available goat meat (kambing). Over time, more accessible proteins like beef, pork, and chicken became common. Today, beef caldereta is a staple main dish served during special family gatherings, holidays, and town fiestas across the Philippines.
