Rub salt equal to 2% of the chicken’s weight thoroughly over the outside and inside the cavity. Leave in the fridge for 2–3 hours. You can also leave it overnight. Rinse the salt briefly from the chicken, then carefully pat it dry again. Massage olive oil all over the chicken and fill the cavity generously with rosemary. Roast in an oven preheated to 200°C for about 1 hour. Once it has cooled, store it in the fridge. On the day Tear the roast chicken into bite-sized pieces by hand. Sandwich the chicken and watercress between slices of bread, then finish with freshly ground black pepper.
