Artist: http://incompetech.com/ Meethi Tikkiyan Serves: 30–35 Tikkiyan Ingredients Semolina (Suji) — 1½ cups Water — 1 cup, divided Brown sugar — 4 cups Lemon juice — ½ teaspoon Whole wheat flour — 2 cups All-purpose flour (Maida) — 1½ cups Baking soda — 1 pinch Coarsely ground fennel seeds — 2 tablespoons Cooking oil or ghee — 2 tablespoons White sesame seeds — as required Cooking oil — for deep frying Directions • Soak 1½ cups semolina in ½ cup water and set aside. • In a pan, add 4 cups of brown sugar and ½ cup water. Cook over low heat, stirring until the sugar dissolves completely and a smooth syrup forms. • Turn off the heat, add ½ teaspoon lemon juice, mix, and set aside. This helps prevent the syrup from crystallizing as it cools. • Add 2 cups of whole wheat flour and 1½ cups all-purpose flour to the soaked semolina. • Add 1 pinch baking soda, 2 tablespoons, coarsely ground fennel seeds, and 2 tablespoons cooking oil or ghee. • Gradually add the prepared sugar syrup and knead into a soft, slightly sticky dough. • Cover with cling film and let it rest for 1 hour. • After resting, knead the dough once again. Large Tikkiyan • Take a large portion of dough and shape it into a ball using a little dry flour. Roll it out and sprinkle white sesame seeds over the top. • Cut into round shapes using a glass or round cutter. • Gently flatten each tikkiya with your palm before frying. • Carefully place in hot oil. Pour hot oil over the top with a spoon so the tikkiyan puff up like puri. • Fry for 2–3 minutes on each side. Start on high heat, then reduce to medium heat and fry until golden and cooked through. Small Round Tikkiyan • Divide the dough into small portions and make small balls. • Roll each ball out, sprinkle with white sesame seeds, and gently press with your palm. • Carefully place in hot oil and fry, turning occasionally, until golden and cooked through. • Remove and place on a paper towel to absorb excess oil. Note • This recipe makes approximately 30–35 tikkiyan, depending on their size. • You can also use dark brown jaggery (gur) instead of brown sugar when preparing the syrup.
