Presented by: Fortune Biryani Special Basmati Rice Ingredients For the Mutton Marinade 1 kg mutton (curry cut) 2 tbsp ginger garlic paste 1 tsp turmeric powder 1 tbsp red chili powder 1 tbsp green chili paste 1 tbsp raw papaya paste 4 cloves 4 green cardamoms 1-inch cinnamon 1 nutmeg 1 mace 2 bay leaves 1 tbsp cumin 1 handful fresh coriander 1 handful fresh mint 4 tbsp fried onions (barista) 1 tbsp garam masala 1 tbsp kewra water 1 tbsp rose water 200 g yogurt 1 tbsp salt 100 ml oil For the Rice 3 litres water 8 green cardamoms 12 cloves 1-inch cinnamon 1 mace 1 tbsp chopped coriander 1 tbsp chopped mint Juice of 1 lemon 3 tbsp salt 1 tbsp whole cumin 2 tbsp oil 1 kg soaked Fortune Biryani Special Basmati Rice For Layering 2 tbsp chopped coriander 2 tbsp chopped mint 4 tbsp fried onions (barista) 1 tbsp garam masala 1 tbsp kewra water 2 tbsp saffron milk 2 tbsp rose water 4 tbsp desi ghee Method Marinate the mutton with all marinade ingredients and massage well. Cover and marinate for 2 hours. Boil water with whole spices, herbs, lemon, salt, and oil. Add soaked Fortune Biryani Special Basmati Rice and cook until 50% done. Layer the partially cooked rice over the marinated mutton. Top with coriander, mint, fried onions, garam masala, kewra water, rose water, saffron milk, and desi ghee. Seal the pot and cook on high flame for 10 minutes, then on low flame for 30 minutes.
