📋 Ingredients (Makes ~15-18 rolls)
For the Batter
Rava (semolina) – 1 cup
Besan (gram flour) – 3 tbsp
Water – as needed (approx. 1 cup, added gradually)
For the Dudhi Mixture
Dudhi (bottle gourd), peeled & grated (medium grate) – 200 g
Oil – 2 tsp
Urad dal – 1/2 tsp
Green chili – 2, crushed
Ginger – 1 small piece, crushed with chili
White sesame seeds – 1 tsp
Fennel seeds (variyali) – 1 tsp
Curry leaves / sweet neem leaves – 10-15, finely chopped
Carrot, grated – 1/2 bowl
Salt – to taste
Turmeric powder – 1/2 tsp
Kashmiri red chili powder – 1 tsp
Coriander powder – 1 tsp
Garam masala (homemade) – 1/2 tsp
To Finish
Roasted peanut powder – 2 tbsp
Fresh coriander, chopped – a handful
Oil – for greasing hands + deep frying (or use Air Fryer for an oil-free version)
