Most people squeeze a persimmon to see if it's ready. I did too, for years, and it's the quickest way to spoil a good one. In this video I show you how to pick a sweet persimmon using five checks I've learned in forty years in my garden in Nagano, high up where the winters are cold. You'll learn how to tell a sweet, non-astringent persimmon like Fuyu from an astringent one like Hachiya before you bite, and why one of them dries your mouth like a wool sock. You'll see what to look for under the green cap, what a loose cap usually means, and when a persimmon is ripe enough to harvest from the tree or buy at the shop. The fourth check is the one I got wrong for about ten years. Every autumn I threw away the sweetest part of the fruit, and my father ate it off the chopping board without saying a word. Whether you grow your own persimmon tree or buy from the shop, none of this is hard. Watch first, then pick.
