Jiangxiangbing, also known as Tujia Sauce Flatbread, is a savory flatbread that originated in Hubei, China. Today, it is commonly found at street stalls across China. The dough is rolled into a thin flatbread and cooked on a griddle until both sides are golden and crispy. While still hot, it is brushed with a rich sauce made from fermented chili bean paste, sweet bean paste, chili, and a blend of spices, then topped with chopped scallions and white sesame seeds. Fresh off the griddle, Jiangxiangbing is crispy on the outside and soft inside, with plenty of flaky layers. The sauce is rich and savory with a mild spicy kick, and the flavor becomes even more fragrant as you chew. Street vendors usually cut the large flatbread into small pieces and sell it by weight. It is a very popular breakfast food and street snack in China.
