This slow-cooked pork ragù has large pieces of pork shoulder cooked until they fall apart in a rich tomato, red-wine and herb sauce.
Tossed through wide ribbons of pasta, it’s generous, deeply flavoured comfort food with very little hands-on cooking.
The pork is browned first for extra flavour, then slowly cooked with onion, carrot, celery, garlic, passata and herbs. Once tender, it is pulled into chunky pieces and returned to the reduced sauce before being tossed with pappardelle or tagliatelle.
It takes time, but the slow cooker does most of the work—and the finished pork should be tender enough to separate without a knife.

Slow cooking: 7–8 hours on LOW or 4–5 hours on HIGH
Slow cooker: 5–6 litres / 5–6 quarts
Ingredients
Pork ragù
• Boneless pork shoulder — 1.2 kg / 2.6 lb, cut into 4 large pieces
• Fine salt — 2 tsp / 12 g
• Black pepper — 1 tsp / 2.5 g
• Olive oil — 2 tbsp / 30 ml
• Large onion — 1, approx 220 g, finely diced
• Carrots — 2 medium, approx 160 g, finely diced
• Celery — 2 sticks, approx 120 g, finely diced
• Garlic — 4 cloves / approx 4 tsp minced
• Tomato purée/paste — 3 tbsp / 50 g
• Dry red wine — ½ US cup / approx ⅖ UK cup / 120 ml
• Passata — 3 US cups / approx 2½ UK cups / 700 ml
• Chicken or pork stock — ⅔ US cup / approx ½ UK cup / 150 ml
• Worcestershire sauce — 1 tbsp
• Dried oregano — 1 tsp
• Dried thyme — 1 tsp
• Fresh rosemary — 1 large sprig or dried 1/2 tsp
• Bay leaves — 2
• Sugar — ½ tsp / 2 g, only if the tomatoes are sharp
To serve
• Tagliatelle — 500 g / 1.1 lb
• Grated Parmesan — 50 g
• Chopped parsley — 2 tbsp
