Enjoy a 4-day biking adventure at Pace Bend Park in Spicewood, Texas, USA. Base camp was set-up at Mesquite Point on the east side of the park (GPS Location: Latitude: 30.4564, Longitude: -98.0092). During the 4-days, I biked approximately 40 miles of multi-use trails and roads throughout the park. Many trails were single track and included all skill levels. It was fun to watch younger bikers practice technical skills. See • Finally Found the Skills Park! - Mountain ... My bikepacking campsite was set-up at Collier Cove on the west side of the park (GPS Location: Latitude: 30.4665, Longitude: -98.0263). On my way home, I stopped to swim in the Pedernales River (Reimers Ranch Park, GPS Location: Latitude: 30.3714 Longitude:-98.1302).
OATMEAL BANANA PUDDING
This tasty breakfast/dessert is easy to make on the trail. Mix 1/2 cup oat flour, 1 very ripe banana and 2 tbs honey in a bowl until the mixture becomes smooth. Add enough water until the mixture becomes a creamy liquid. Heat in a double boiler, while continue to stir until the mixture thickens. Pour into serving bowl and sprinkle with brown sugar and eat hot or cold. Note: Purchase oat flour or make your own by grinding dry oatmeal in a blender. Optionally, heat the brown sugar topping with a torch until it melts. This will transform the sugar into a crunchy treat .
MUSHROOM STROGANOFF
This recipe was simplified for a one-person camping meal. In a small pot, sauté 1/4 cup diced onions in 1 tbs olive oil until soft. Add water and egg noodles (of your choice) and cook until noodles are soft. Gradually stir in 1/2 cup sliced mushrooms (preferably fresh, but dehydrated are OK) and 2 tbs flour that has been mixed with equal amount of water. Add 1/4 cup sour cream or plain yogurt Salt (garlic) and pepper to taste.
BLUEBERRY MUFFIN MINI-BUNDT CAKE
This tasty recipe is super easy to make and has been modified for one-person camping. Combine 1 cup self-rising flour, 1/2 cup milk (or plant milk substitute), 2 tbs dried blueberries (or substitute, such as raisins), 1/2 tsp vanilla extract, 1/4 cup honey (or sugar), 2 tbs olive oil. Mix ingredients in plastic bag (if mixture is too thin, add additional flour). Pour into mini-bundt or cupcake pan and bake in double-boiler within a camping oven. Bake until a stick inserted in the center comes out clean.
CARDBOARD OVEN
Make the cardboard oven shown in this video from a corrugated cardboard box. Cut cardboard into two pieces: 12 in x 28 in rectangle and 9-1/2 in diameter circle. Glue heavy-duty aluminum foil to the cardboard with contact cement or white glue. Allow the glue to thoroughly dry for several days before using the oven. Cardboard insulation provides stable temperature control, that is much better an oven with only aluminum sidewalls. Use metal skewers as a baking rack. In this demonstration, I used Sterno as the heat source. Alternatively, charcoal in a fire bowl could be used. Do not heat cardboard ovens above 450 F. Do not expose cardboard ovens to direct flames of a campfire.
