Brewing a clone of Theakston Old Peculier | Accurate recipe | Brewday #22

It is time to try cloning the Theakston Old Peculier which I tried on cask recently. Since my last attempt a year ago was with the old recipe, I'm compiling a new one trying to get as close as possible to the current recipe used by Theakston. Though the yeast turns out to be very tricky.
