Come eat with me at a cart where the rolls never stop. A round of rice paper is dipped, pork belly and prawns go down the middle with noodles and a fistful of herbs, a long green chive is laid in so it sticks out the end, and the roll is tucked closed in one move - tray after tray, all morning, with a bowl of thick peanut sauce under crushed peanuts. Then crab soup from a huge pot, bun cha over coals, griddled tacos, a whole calf on the spit, steamed Hue cakes, and crab sticky rice.
No narration, no staging - just the food and the sound of the street.
