Have you ever noticed these traditional leafy greens growing around fields and vacant plots? 🌿 Saanthi, Kulfa, Chaulai, and Kondra are four lesser-known greens that have been part of traditional Indian food culture. In this video, I’ll show you how to recognise these leafy greens, what nutrients they contain, and how you can include them in your everyday meals. 🌱 n this video, you’ll learn about: Saanthi: Its dietary fibre content and traditional uses in everyday cooking. Kulfa (Purslane): A leafy green that contains plant-based omega-3 fatty acids and vitamin E. Chaulai (Amaranth): Both red and green varieties, and their nutritional value, including iron, calcium, and magnesium. Kondra: How to recognise this traditional leafy green and learn about its culinary uses. I’ll also share simple ways to prepare these greens at home. You can add them to wheat flour to make rotis, mix cooked greens into curd for raita, or use them to prepare traditional sabzi and kadhi. Our elders used to include many local and seasonal greens in their diets. Over time, some of these traditional foods have become less familiar to us. Learning about them is a wonderful way to reconnect with our food traditions and local biodiversity. A word of caution: Always confirm the identity of a wild plant before eating it. Never consume a plant based only on its appearance in a video. Avoid collecting greens from roadsides or polluted areas, as they may be contaminated. #TraditionalIndianFood #IndianLeafyGreens #Kulfa #Purslane #Chaulai #Amaranth #Saanthi #Kondra #DesiSaag #TraditionalFoods #DadiKeNuskhe
