Enchiladas, like chilaquiles and scrambled egg tacos, provide quick, sure-fire comfort for me. They're the perfect balance of toothsome texture (supple corn tortillas and a little meat, seafood or vegetables), brightness (tomatillo sauce), savoriness (Mexican cheese) and freshness (onions and cilantro).
