Autumn always makes me want to slow down and appreciate the little things a little more 🤎 I love filling my cottage with pumpkins, candlelight and the comforting scents of homemade food — making beeswax candles, baking pears, cooking a potato & lentil pie and enjoying warm rice pudding with plum compote. These simple rituals make me feel so at home and are what I love most about this cozy season 🍂🕯️ Come spend a few autumn days with me and soak up the cozy feeling🤎 Potato & Lentil Pie 🥧 Ingredients • 250 g beluga lentils • 500 ml water • 2 onions • 2 garlic cloves • 4–5 tbsp olive oil • 1 tbsp tomato paste • 2 carrots • 6–7 large floury potatoes • 2 tbsp butter • Salt, pepper & vegetable stock to taste • 1–2 sprigs of sage, for decoration Method Finely chop the onions and gently sauté them in the olive oil. Add the garlic and tomato paste and cook for another minute or two. Add the washed lentils and water, cover with a lid and let everything simmer over medium heat for about 35 minutes, stirring occasionally, until the lentils are tender but still have a little bite. Season with salt, pepper and vegetable stock to taste. While the lentils are cooking, boil the potatoes until soft. Drain, peel and mash them with the butter, salt and pepper until creamy. Once everything is ready, spoon the lentil mixture into an ovenproof dish and spread the mashed potatoes evenly on top. Garnish with a few sprigs of sage and bake at 200°C / 400°F until golden and beautifully crisp on top 🍂🤎 Vegan Rice Pudding with Plum Compote 🍑 For the rice pudding • 1 litre oat milk • 250 g rice pudding rice / short-grain rice • 100 g sugar For the plum compote • 750 g plums or damsons • 150 ml water • 25 g sugar • Juice of ½ lemon • 2 cinnamon sticks • 1 tsp ground cinnamon Method Start by making the rice pudding. Rinse the rice and set aside. Bring the oat milk to a gentle boil over medium heat, stirring constantly. Add the rice and continue to simmer over medium heat for about 20 minutes, stirring occasionally. Remove from the heat, cover with a lid and let it rest for another 10–15 minutes. While the rice pudding is cooking, prepare the plum compote. Wash, halve and stone the plums, then cut them into quarters. Add the plums, water, sugar, lemon juice and cinnamon to a saucepan and let everything gently simmer over medium heat for about 15 minutes, until the plums are soft and the juices have thickened slightly. Serve the warm, creamy rice pudding with plenty of plum compote and a little extra cinnamon. 🍂🤎 A little note: You can easily adjust the amount of sugar in both the rice pudding and the compote to your taste. And if you prefer, you can also make the rice pudding with regular cow’s milk instead of oat milk. Full Moon Witch’s Brew 🌕✨ Ingredients • 1 litre cloudy natural apple juice • 1 litre blackcurrant juice • 1 organic orange • 3 cinnamon sticks • 1 tsp ground cinnamon • 5 whole cloves Method Add the apple juice and blackcurrant juice to a large pot. Slice the orange and add it together with the cinnamon sticks, ground cinnamon and cloves. Gently heat everything over medium heat, but do not let it boil. Let the spices infuse for a little while, filling your kitchen with the most wonderful autumn aroma. 🍊✨ Pour everything through a sieve to remove the spices and orange pieces.
