Add vegetable oil and mix briefly. Add milk and mix just until combined. Sift flour, baking powder and salt together. Add the dry ingredients gradually and gently fold with a spatula. Coat ½ cup chopped pistachios with 1 tablespoon of the flour mixture and fold them into the batter. Pour the batter into a greased and floured ring cake pan. Sprinkle the remaining pistachios over the top. Bake at 175°C / 350°F for about 38–45 minutes.
