Welcome to Chef Saadat’s Kitchen! Today’s recipe is Dynamite Chicken — a spicy, crispy, and creamy signature dish loved for its explosive flavor and restaurant-style crunch. This dish is perfect as a starter, party snack, or indulgent comfort meal, and it’s incredibly easy to recreate at home. In this video, you’ll learn: • How to make chicken extra crispy • The perfect dynamite sauce balance • Restaurant-style frying & tossing technique • Plating tips for maximum appeal Recipe Card: Dynamite Chicken Crispy, fluffy fried chicken pieces tossed in a signature creamy, sweet, and spicy "Dynamite" sauce. This recipe uses a secret ingredient—7Up or Sprite—to make the batter extra light and airy. Ingredients 1. The Chicken Prep: Chicken Breast: 250g (cut into bite-sized cubes). Salt: ¼ tsp. White Pepper: ¼ tsp. Garlic Powder: A pinch. Vinegar: 1 tsp. Note: Let this marinate for at least 30 minutes for better flavor. 2. The Dynamite Sauce: Mayonnaise: 1 cup (use a good quality, not overly sweet version). Ketchup: ½ cup. Sriracha (or Hot Sauce): 3 tbsp (adjust to your heat preference). 3. The "Light & Airy" Batter: All-purpose Flour (Maida): 5 tbsp. Cornstarch (Cornflour): 2 cups (for maximum crunch). Egg: 1 whole (optional—Chef suggests skipping for more crunch, but used in video). Salt: ¼ tsp. White Pepper: A pinch. Garlic Powder: A pinch. Baking Powder: 1.25 tsp (crucial for fluffiness). 7Up or Sprite (Chilled): Approx. ½ cup (add gradually until the batter is smooth and slightly runny). Cooking Oil: 1 tsp (mixed into the batter at the end for smoothness). Method Step 1: Make the Sauce In a bowl, whisk together the mayonnaise, ketchup, and Sriracha. Taste and adjust—add more Sriracha if you want it spicier. Set aside. Step 2: Prepare the Batter Mix the maida, cornstarch, salt, white pepper, garlic powder, and baking powder in a bowl. Add the egg (if using) and start pouring the chilled 7Up/Sprite. Whisk until you have a smooth batter that isn't too thick—it should coat the chicken but drip off slowly. Stir in 1 tsp of oil at the very end. Step 3: Fry the Chicken Dip the marinated chicken cubes into the batter, ensuring they are fully coated. Heat oil on medium-low heat. Tip: Do not use high heat, as the batter will brown before the chicken cooks through. Carefully drop the chicken pieces into the oil. Fry until they are a light golden brown and the batter feels airy and crisp. Drain on a wire rack or paper towel. Step 4: Assembly Place a bed of shredded cabbage or iceberg lettuce in a serving bowl or glass. You can either toss the warm chicken directly in the sauce or place the chicken on the lettuce and generously drizzle the Dynamite sauce over the top. Serve immediately while the chicken is still crunchy!
