Prep time: 10 mins | Cook time: 20 mins | Yield: 12–15 Ladoos Ingredients Whole Wheat Flour (Atta): 1 cup Gram Flour (Besan): ½ cup Desi Ghee: ½ cup + 1 tbsp Jaggery (Gud): ¾ cup (grated or powdered) Poppy Seeds (Khus Khus): 2 tbsp Mixed Dry Fruits: ¼ cup (finely chopped almonds, cashews, pistachios) Cardamom Powder (Elaichi): ½ tsp Step-by-Step Recipe: 1. Roast the Poppy Seeds & Nuts: Heat 1 tsp ghee in a heavy-bottomed pan. Add poppy seeds and chopped dry fruits. Fry on low heat for 1–2 minutes until golden and fragrant. Transfer to a plate. 2. Roast the Flours: In the same pan, melt ½ cup ghee. Add whole wheat flour and besan. Roast on low-medium flame, stirring continuously to prevent burning. 3. Achieve the Aroma: Roast for 12–15 minutes until the mixture turns golden brown, releases a rich aroma, and the ghee starts separating from the flour. Turn off the flame. 4. Mix in Extras: Stir in the roasted dry fruits, poppy seeds, and cardamom powder. Let the mixture cool down for 4–5 minutes until warm to the touch (do not add jaggery to boiling hot flour, or it will turn hard). 5. Add Jaggery & Shape: Add the grated jaggery and mix thoroughly using your hands or a spatula until completely combined. Roll into smooth, round ladoos while the mixture is still warm. Optionally, roll the finished ladoos in extra toasted poppy seeds for visual appeal.
