I kept seeing the viral cottage cheese protein bread boule and knew I had to try it. But when I saw how high the carbs could be with self-rising flour, I started wondering… could I make my own lower-carb version? So I headed into the kitchen and gave it a try! This Tomato, Feta & Basil Protein Boule is made with almond flour, unflavored whey protein isolate and cottage cheese. My dough was a little sticky, so I added about 2 extra teaspoons of almond flour and skipped the optional egg white/water completely. TOMATO, FETA & BASIL PROTEIN BOULE Ingredients • ¼ cup (28g) almond flour • About 2 additional tsp almond flour, as needed • 2 tbsp (15g) unflavored whey protein isolate • ½ tsp baking powder • 1 tsp dried basil • Pinch of salt • 2 tbsp (50g) 4% cottage cheese • 1 tbsp chopped feta cheese • 3 small grape tomatoes, diced Instructions 1. Mix the almond flour, whey protein isolate, baking powder, dried basil and salt. 2. Add the cottage cheese, feta and diced grape tomatoes. Mix until a dough forms. If your dough is too sticky, add a little additional almond flour as needed. I added about 2 teaspoons. 3. Shape the dough into a small round shape, place in oven safe dish lined with parchment paper & lightly sprayed with oil of choice, and place it in the air fryer. 4. Air fry at 325°F for 15 minutes. Check the bottom for doneness. Mine still needed additional cooking, so I loosely tented the bread with aluminum foil to keep the top from becoming too brown and returned it to the air fryer for another 10 minutes at 325°F. 5. Check that the bread is cooked through, then allow it to cool slightly before slicing. Air fryers can vary, so cooking time may need to be adjusted. Only use aluminum foil if permitted by your air fryer manufacturer. And yes, I used the whole bread to make a sandwich! I made an egg & cheese sandwich you see at the end. ESTIMATED NUTRITION — ENTIRE BREAD Approximately 350 calories | ~8g net carbs Nutrition is an estimate based on the ingredients and amounts I used and may vary depending on brands and exact measurements. The egg, cheese and other sandwich fillings shown at the end are not included. If you try this recipe, I’d love to know what you think, and what you would change yours to make it unique for YOU!
