I stopped frying eggplant and started rolling it instead — and honestly, this plate looks like it came from a restaurant. Tender oven-baked eggplant wrapped around a rich beef and vegetable filling, resting on tomato sauce under a blanket of melted mozzarella. No breading, no splattering oil, no mess. With bulgur pilaf and a Greek salad on the side, it's a whole dinner 👇 INGREDIENTS Eggplant: • 2 eggplants • 3 teaspoons salt (for soaking) + cold water • 50 g olive oil • 1 teaspoon salt • ½ teaspoon black pepper Filling: • 2 tablespoons vegetable oil • 1 red onion • 2 cloves of garlic • 1 carrot • 1 bell pepper • 400 g ground beef • ½ teaspoon salt • ½ teaspoon black pepper • 1 teaspoon oregano Sauce and topping: • 250 ml tomato sauce • A pinch of salt • A pinch of black pepper • ½ teaspoon dried garlic • 150 g mozzarella, grated • 10 g butter and a small bunch of dill (optional) Bulgur pilaf: • 20 g butter • 1 onion • 200 g bulgur • 2 cups hot water • Salt and pepper to taste Greek salad: • 2 tomatoes • 2 cucumbers • 1 onion • 100 g feta cheese • A small bunch of parsley • 30 g black olives • 1 tablespoon lemon juice • 1 tablespoon olive oil • Salt and pepper to taste Sour cream dip: • 3 tablespoons sour cream • 1 clove of garlic • A few spring onions • Salt and pepper to taste HOW TO MAKE IT 1. Slice the eggplants lengthwise, soak them in salted cold water for 15 minutes, then pat dry. 2. Brush the slices with olive oil, salt and pepper, and bake at 200°C (390°F) for 20-25 minutes. 3. Sauté the red onion in vegetable oil for 2-3 minutes, then add the garlic for 30-40 seconds. 4. Add the carrot and bell pepper and cook for 5-6 minutes until soft. 5. Add the ground beef and fry for 5-7 minutes, until it turns light and the liquid evaporates. Season with salt, pepper and oregano. 6. Mix the tomato sauce with salt, pepper and dried garlic, then spread a few spoons over the bottom of the baking dish. 7. Put a spoonful of filling on each eggplant slice and roll it up. 8. Arrange the rolls in the dish, cover with the remaining tomato sauce and the grated mozzarella. 9. Bake at 200°C (390°F) for 15 minutes, until the cheese melts and turns golden at the edges. 10. For the pilaf: melt the butter, fry the onion for 2 minutes, add the bulgur and cook for 1 minute, pour in the hot water, season, cover and cook for 10-12 minutes. 11. Chop all the salad vegetables, add the feta, parsley and olives, then dress with lemon juice and olive oil. 12. Stir the sour cream with garlic, spring onion, salt and pepper for the dip. Why it works: pre-baking the eggplant makes the slices flexible enough to roll without tearing, and it drives the water out — so the filling stays rich instead of swimming in liquid, and you never touch a deep fryer.
