Rempeyek, also called Peyek, is one of Indonesia's most addictive snacks - thin, shattering-crisp, and deeply savory.
Think of it as a lace-thin rice flour cracker fried around a topping.
What it is
The base batter is made from rice flour, a little tapioca starch, coconut milk, and a spice paste of candlenut, coriander, garlic, kencur / aromatic ginger, and salt. The batter is very thin and watery.
That batter is ladled down the side of a hot wok and fried until it becomes a flat, lacy, golden disc. Before frying, something is added on top - and that topping is what gives each rempeyek its name.
It’s not soft at all. When it’s right, it shatters when you bite it, then melts with that nutty, coconut and spice flavor.
The most common types
*1. Rempeyek Kacang:* The classic. Topped with peanuts, usually halved or sliced peanuts. This is the one you see everywhere.
*2. Rempeyek Teri:* With tiny dried anchovies. Saltier, more umami, very popular in Javanese households.
*3. Rempeyek Udang:* With small whole shrimps, shell and all. Crispy and slightly sweet.
*4. Rempeyek Kacang Hijau / Kedelai:* With mung beans or soybeans. Common in East Java.
*5. Modern variations:* In Tangerang and Jakarta now you'll find rempeyek with spinach, oyster mushroom, crab, or even spicy daun jeruk / kaffir lime leaves.
Taste and texture
It’s savory, nutty, garlicky, and fragrant from coriander and kencur. The peanut gives it richness, the anchovy or shrimp version gives it a salty sea kick. Because it’s deep-fried, it’s very light but also rich - the kind of snack you can't stop eating.
In Indonesia, rempeyek is not usually eaten alone. It's a side dish for pecel, nasi kuning, soto, lontong sayur, or just with steamed white rice. It adds crunch to any meal.
The difference between `peyek` and `rempeyek`? No real difference - `peyek` is just the shorter name, `rempeyek` is more common in Java. In Sunda it’s often just called peyek.
If you’ve never tried it, the Kacang version is the best introduction.
