Come spend a slow autumn day with me here on Cape Cod. 🍂 I'm sharing a little glimpse into an ordinary day at home, starting with morning prayers and coffee, followed by a peaceful walk through the woods and a little forest bathing, and ending with a homemade apple crisp using einkorn flour. I've included the full recipe below if you'd like to try it yourself! The older I get, the more drawn I am to a slower, simpler way of life. I love finding ways to bring a little more intention into everyday routines, whether that's baking from scratch, spending time in nature, or keeping traditions that have been passed down through generations. I hope you'll enjoy spending a little part of your day with me. 🤎 🍎 Einkorn Apple Crisp Ingredients: For the apple filling: 8–9 medium apples (about 3–3½ lbs) ⅓ cup brown sugar 2 tablespoons all-purpose einkorn flour 1½ teaspoons cinnamon ¼ teaspoon nutmeg 1 tablespoon lemon juice 1 teaspoon vanilla extract Pinch of salt For the crumble topping: 1½ cups old-fashioned rolled oats 1½ cups all-purpose einkorn flour 1 cup packed brown sugar 1½ teaspoons cinnamon ½ teaspoon salt ¾ cup (1½ sticks) cold unsalted butter, cubed Instructions: 1. Preheat oven to 375°F. Lightly butter a 9×13-inch baking dish. 2. Peel, core, and slice apples about ¼ inch thick. 3. In a large bowl, toss the apples with brown sugar, einkorn flour, cinnamon, nutmeg, lemon juice, vanilla, and salt. 4. Spread the apple mixture evenly in the prepared baking dish. 5. In another bowl, combine oats, einkorn flour, brown sugar, cinnamon, and salt. 6. Cut in the cold butter until the mixture forms coarse, chunky crumbs. 7. Sprinkle the topping evenly over the apples without pressing it down. 8. Bake for 45–55 minutes, until the topping is golden brown and the apple filling is bubbling. 9. Allow to cool for 20–30 minutes before serving. Delicious served warm with a scoop of vanilla ice cream! Thank you so much for watching and being here!
