Papa Earl Dawson didn't know which end of a pot to hold when his wife Corinne passed, and for most of a year supper was whatever was close, eaten standing at the counter. These are the 30 rice cooker meals he taught himself after, for seniors living alone and anybody cooking for one: dump-and-go suppers, about three ingredients apiece, one lever, nothing to chop or watch, and a pot that shuts itself off. He counts them down from thirty to one: eggs that cook right on top of the rice, cheese grits, pintos and rice for about two dollars, a sweet potato with no oven, spaghetti with no pot of water to lift, a catfish supper with no skillet, cabbage and smoked sausage, oatmeal waiting when you wake up, mashed potatoes for hands that ache, cornbread with the honest truth about the crust, collard greens from the frozen bag, black-eyed peas and the midnight smoke alarm that made him quit the stove, a real cake his granddaughter dared him to bake, a smothered pork chop, soft rice and milk for new dentures, and the hamburger steak he used to order every Wednesday. And there's a sausage supper the folks at church swear simmered all afternoon, made with one can that sits by his rice cooker the whole video with its label peeled off. He finally tells what was on that label right before the Sunday dinner that sat him back down at his own table closes it out.
In this one, Papa Earl covers:
• 30 easy rice cooker meals for one, about three ingredients each, with salt, pepper and water always free
• The four rules every rice cooker supper stands on (rinse, water to the line, lid down, let it rest), and the gummy first pot that taught him
• Senior cooking made safe and simple: steam a whole supper on top of the rice, the safe temperature for chicken, pork and ground beef, and what the keep-warm setting is and isn't for
• Cooking for one with no waste: freezing rice flat in single portions, half a can saved for tomorrow, one store chicken that feeds you twice, and the little three-cup cooker made for one
• The sausage and rice that tastes like it simmered all afternoon, and the one can from the pantry that does it (finally revealed)
Tell Papa Earl in the comments where you're watching from, and who did the cooking at your house growing up. He reads every last one.
