Hi there! I know I’ve been missing from here for a while now. I was too busy soaking in every moment in India with my family that I barely had time to pick up my camera, let alone edit.
So, here I am, back in Canada, finally sitting down to edit the only vlog I managed to film in India for you all.
This vlog captures the days I spent preparing to travel alone with my toddler for a 24-hour journey, the struggles along the way, finally meeting my family after two years, and the first few beautiful days back home.
I’ve also included a little butter cookies recipe in this vlog — buttery, crumbly and so simple to make. 🍪
Butter Cookies Recipe:
• 220 g butter, softened
• 100 g powdered sugar
• 1 egg yolk
• 1 tsp vanilla extract
• 280 g all-purpose flour
• A pinch of salt
Method:
1. In a bowl, beat the softened butter and powdered sugar until light and creamy.
2. Add the egg yolk and vanilla extract, and mix until well combined.
3. Gradually add the flour and a pinch of salt. Mix gently until a soft dough forms. Do not overmix.
4. Wrap the dough and refrigerate for about 30 minutes.
5. Preheat the oven to 175°C (350°F).
6. Roll out the dough and cut into your desired shapes, or simply shape them into small balls and flatten slightly.
7. Place the cookies on a lined baking tray and bake for 10–14 minutes, or until the edges are lightly golden.
8. Let them cool on the tray for a few minutes before transferring them to a cooling rack.
9. Enjoy with a cup of tea or coffee! ☕🍪
Tip: For extra buttery, melt-in-your-mouth cookies, make sure the butter is softened but not melted, and avoid overworking the dough.
