Hello! Welcome! Today we will be taking two cases of tomatoes and turning them into shelf stable marinara sauce. Join me for a day of filling the house with the aroma of slow cooked marinara sauce and for preserving for the long cold winter. Perfect for slow living in the Catskill Mountains of Upstate New York.
Recipe
For every 20 pounds of Tomatoes:
1 Medium onion (grated or pureed)
1/2 cup Extra Virgin Olive Oil
3 Heads of Garlic (Chopped)
1 - 2 Whole Basil Leaves For Each Jar
1 tablespoon Dried Oregano
Salt & Pepper
(Optional) 1 tablespoon Red Pepper Flakes
Citric Acid SEE NOTE:
Core and cook down tomatoes. You can peel the tomatoes first if you like. Once the tomatoes have cooked down I like to run them through a strainer to catch the seeds and skin.
Put the tomato puree back on the stove and cook down until thickened. Stirring all along.
Chop garlic and grate the onion. Lightly toast the garlic in extra virgin olive oil. Then add the onion. Add the garlic and onion to the thickened sauce.
Add oregano, salt and pepper.
Once the sauce is done, fill your jars with sauce and add 1-2 basil leaves per jar.
You can freeze the sauce in pint or quart size containers. Cool down sauce before adding to container.
Process jar in a Water Bath Canner = pints -35 minutes, Quarts -40 minutes. Depending on altitude.
NOTE: If you would like to water bath can, the USDA requires tomatoes recipes to use citric acid.
(1/4 teaspoon for pints, 1/2 teaspoon for quarts)
This is something I do not use. I am not a professional.
Water bath = pints -35 minutes, Quarts -40 minutes
