Chola Bhuna is a flavorful and aromatic dish made by cooking boiled chickpeas with a blend of spices and fresh ingredients. Dried red chilies, chopped onions, ginger-garlic paste, and tomatoes form a rich base, enhanced by turmeric, chili, coriander, and roasted cumin powder. Boiled potatoes add a hearty texture, while cubed onions and green chilies provide a mild crunch. A final touch of chat masala and fresh coriander leaves elevates the dish with tangy and herbal notes. Perfectly spiced and deeply satisfying, Chola Bhuna pairs well with Puffed Rice, Lentil/Vegetable/Onion Fritters or can be enjoyed on its own.
Doi Chola is a refreshing and nutritious dish made by mixing boiled chickpeas with boiled potatoes, tomatoes, chopped onions, cucumbers, and green chilies. The addition of creamy yogurt enhances its texture, while fried cumin powder, chat masala, and salt bring a perfect balance of flavor. Fresh coriander leaves add a burst of freshness, making it a light yet satisfying option.
Both Chola Bhuna and Doi Chola are ideal healthy choices for Iftar during Ramadan, providing a delicious combination of protein, fiber, and essential nutrients to replenish energy after a day of fasting.
