SIMPLE BROWN BUTTER SOFT COOKIES ❤️BAHAN-BAHAN ❤️BAHAN BROWN BUTTER 👉120 g Mentega atau blend butter, jika menggunakan teknik biasa bukan brown butter, gunakan takaran mentega 100 g. Saya pake oplosan Westgold dan Anchor 👉2 g Kopi bubuk instan, opsional BAHAN ADONAN 👉190 g Tepung Terigu protein sedang, boleh diganti dengan tepung mocaf tapi takaran dikurangin 15 g biar gak terlalu kokoh. NOTE: Menurut saya hasil yang bikin cookies kres di luar dan lembut di dalam itu pake terigu merek Bola Salju 👉15 g Tepung Maizena, opsional. Kalau dilewatkan Ganti dengan tepung terigu dengan porsi yang sama 👉3 g atau setara dengan ½ sdt garam 👉2 g atau setara dengan ½ sdt Baking Soda 👉80 s.d 100 g brown sugar, sesuai selera. BTW Brown sugar itu bukan palm sugar ya, kalau pake palm sugar teksturnya cenderung lebih kering 👉40 s.d 50 g Gula halus atau gula pasir yang dihaluskan. NB: Untuk takaran brown sugar ataupun Gula halus itu sesuai selera, tapi jangan kurang dari yang disarankan agar tekstur cookies bisa moist dan lembab 👉1 Telur 👉1 sdt Ekstrak Vanilli atau bisa diganti dengan ½ sdt Vanili bubuk TOPPING DAN FILLING 👉Secukupnya chocochips atau callets Callebaut atau potongan coklat Couverture, atau oplosan ke-tiganya, total sekitar 150 g 👉 Secukupnya coklat untuk topping, opsional.
