A wonderfully soft and airy sour cherry cake made with a simple homemade sponge! This classic recipe is light, juicy, and easy to make. You can enjoy it with fresh or frozen sour cherries, or substitute them with your favorite seasonal fruits. INGREDIENTS 10 eggs 150g sugar 120ml vegetable oil 120g all-purpose flour 10g baking powder (1 sachet) A pinch of salt 350g sour cherries (pitted, fresh or frozen) STEP-BY-STEP INSTRUCTIONS Separate eggs: Carefully separate the egg whites from the egg yolks into two bowls. Add a pinch of salt to the egg whites and whip with a mixer until fluffy. Gradually add 150g of sugar while mixing continuously until you get a firm, glossy meringue. Add the egg yolks and mix briefly until incorporated. Add flour & baking powder: Sift in 120g flour and 10g baking powder. Fold gently with a spatula using bottom-to-top motions to keep the batter light and airy. Slowly pour in 120ml oil and fold gently until smooth. Line a 25x33 cm baking sheet with parchment paper and pour in the batter. Distribute the sour cherries evenly over the top of the batter. Bake in a preheated oven at 180°C (350°F) for about 25 minutes, or until a toothpick inserted into the center comes out clean. Let it cool slightly, slice into squares, and enjoy! You can swap sour cherries for sweet cherries, blueberries, raspberries, or sliced peaches. What fruit would you use for this cake? Let me know in the comments!
