Welcome to Seoul Bite! 🥬 Today, we are making a wonderfully clean and refreshing White Kimchi, also known as Baek Kimchi (백김치).
If you or your kids struggle with spicy foods, this is the perfect traditional Korean fermented dish for you! Because we don't use any red chili powder, it is completely mild but still packed with the deep, rich, and tangy flavors that make kimchi so delicious and healthy.
In this video, I'll walk you through all the essential steps—from properly salting the napa cabbage overnight to creating the perfect clear, sweet, and savory broth using Korean pear, radish, and a rice flour paste.
What you'll need:
2 heads of Napa Cabbage
Coarse salt (for sweating the cabbage) & Fine salt (for seasoning)
1 Korean Pear & 1 Onion
Radish, Garlic, Ginger, & Green Onions
Sweet Rice Flour (to make the paste)
New Sugar (or your preferred sweetener) & a Carrot for a pop of color!
