Brioches all'Arancia Facilissime e Buonissime

Ciao a tutti e benvenuti sul canale! Oggi prepariamo insieme delle profumatissime brioches all’arancia, morbide, soffici e perfette per la colazione o la merenda. Hanno un aroma incredibile grazie alla scorza d’arancia che le rende davvero irresistibili. Vediamo subito come prepararle! Per l’impasto ci serviranno: 500 grammi di farina 0 100 grammi di burro 2 uova leggermente sbattute 150 ml di latte 120 grammi di zucchero semolato una bustina di lievito di birra secco la scorza grattugiata di un’arancia e un pizzico di sale. Ci serviranno inoltre un paio di tocchetti di burro fuso, 50 grammi di zucchero semolato e la scorza di un’arancia. Iniziamo sciogliendo il burro che ci servirà in seguito e mettiamolo da parte. In un’altra ciotolina mescoliamo lo zucchero semolato con la scorza d’arancia e teniamo anche questo da parte. Ora mettiamo la farina nella ciotola della planetaria. Aggiungiamo il lievito, poi il burro freddo un pezzo alla volta e la scorza d’arancia. Lasciamo incorporare bene dopo ogni aggiunta. A questo punto sostituiamo la foglia con il gancio. Aggiungiamo le due uova leggermente sbattute, lo zucchero, il latte poco per volta e infine un pizzico di sale. Amalgamiamo bene dopo ogni aggiunta. Trasferiamo l’impasto in un recipiente, copriamo con pellicola e lasciamo lievitare a temperatura ambiente fino circa al raddoppio del volume. Una volta lievitato, trasferiamo l’impasto sul piano da lavoro leggermente infarinato e stendiamolo con il mattarello dandogli una forma rettangolare. Spennelliamo tutta la superficie con il burro fuso e cospargiamo il mix di zucchero e scorza d’arancia. Adesso arrotoliamo dal lato lungo fino ad ottenere un rotolo. Tagliamolo a rondelle. Alcune le sistemiamo in una teglia per muffin, mentre altre le modelliamo premendo al centro con uno stecco, proprio come vedete nel video, e le disponiamo su una teglia da forno. Lasciamo lievitare ancora per circa 40 minuti a temperatura ambiente. Infine cuociamo in forno statico preriscaldato a 180 gradi per circa 25 minuti. Una volta cotte, con una spatola trasferiamo le brioches su una griglia e lasciamole raffreddare. Quelle nella teglia per muffin ovviamente lasciamole raffreddare prima di prenderle con le mani. Ed ecco pronte le nostre brioches all’arancia: soffici, profumate e davvero deliziose! They have an amazing aroma thanks to the orange zest, which makes them truly irresistible. Let’s get started right away! For the dough we’ll need: 500 g all-purpose flour (type 0) 100 g butter 2 lightly beaten eggs 150 ml milk 120 g granulated sugar 1 packet of dry baker’s yeast the grated zest of one orange and a pinch of salt. We will also need a couple of knobs of melted butter, 50 g of granulated sugar, and the zest of one orange. Let’s start by melting the butter we’ll use later and set it aside. In another small bowl, mix the sugar with the orange zest and set that aside as well. Now place the flour in the bowl of a stand mixer. Add the yeast, then the cold butter a little at a time, followed by the orange zest. Let each addition fully incorporate before adding the next. At this point, switch from the paddle attachment to the dough hook. Add the two lightly beaten eggs, the sugar, the milk a little at a time, and finally a pinch of salt. Mix well after each addition. Transfer the dough into a bowl, cover with cling film, and let it rise at room temperature until it roughly doubles in size. Once risen, place the dough onto a lightly floured work surface and roll it out with a rolling pin into a rectangular shape. Brush the entire surface with melted butter and sprinkle over the sugar and orange zest mixture. Now roll it up from the long side to form a log. Cut it into slices. Place some into a muffin tray, while others can be shaped by pressing the center with a stick, as shown in the video, and arranged on a baking tray. Let them rise again for about 40 minutes at room temperature. Finally, bake in a preheated static oven at 180°C for about 25 minutes. Once baked, transfer the brioche with a spatula onto a wire rack and let them cool. Those in the muffin tray should, of course, be left to cool before handling them with your hands.
