Does everyone in Shandong really eat Shandong cuisine?
The province is commonly associated with the character “Lu,” but the ancient states of Qi and Lu were not the same as modern Shandong. Coastal communities, mountain regions, and inland towns have long had their own ways of life—and their own food traditions.
When people talk about Lu cuisine, they often bring up centuries of culinary history, elaborate banquet dishes, and celebrated chefs. That history is real. But while skilled cooks from Fushan were preparing sophisticated dishes in Beijing restaurants, ordinary families back in Shandong were eating corn cakes, sweet potatoes, pickled vegetables, and shrimp paste.
Then there’s the classification itself. In 1980, two articles appeared on the same page of the People's Daily: one introduced China’s Eight Great Cuisines, while the other called for the rescue of culinary traditions damaged during political campaigns. In 1983, two articles on another single page used strikingly different language about how established the idea of “cuisine schools” really was.
And consider Kung Pao chicken. Shandong, Sichuan, and Guizhou all have traditions associated with it, but the competing origin stories remain unproven. Chili peppers came from the Americas, as did corn and sweet potatoes—ingredients that eventually became part of everyday Chinese food.
After leaving Beijing, Shanghai, and Guangzhou and returning to Qingdao, I’ve spent much of my time around the Shandong coast. When I go out to eat, what matters to me is simple: good food, a fair price, and an enjoyable meal.
Maybe the more revealing question isn’t which cuisine deserves first place, but who gets to define what counts as authentic in the first place.
