These Southern-style candied yams are rich, buttery, and slow-cooked in a glossy brown sugar syrup with warm spices and citrus — the kind of yams that always disappear first at the holiday table. This is the version of candied yams people talk about — tender but not mushy, sweet but balanced, and full of deep, old-school flavor. If your candied yams never taste like the ones everybody remembers, this recipe fixes that.
Servings: 6–8Total Time: ~50 min
Ingredients
3–4 large sweet potatoes, peeled & sliced
1 stick (½ cup) unsalted butter
¾ cup brown sugar
¼ cup granulated sugar
¼ cup maple syrup
¼ cup orange juice
1–2 tsp fresh grated ginger or 2 tsp ginger paste
1–2 whole star anise
2–3 strips orange zest
1 tbsp cinnamon powder 1 cinnamon stick
1/2 tsp allspice powder
½ tsp nutmeg
1 tbsp vanilla
Pinch of salt
Instructions
1. Add butter, brown sugar, sugar, maple syrup, orange juice, ginger, star anise, orange zest, cinnamon stick, nutmeg, vanilla, and salt.
2. Add the sweet potatoes and cover with syrup.
3. Cover and cook on medium-low for 20–25 minutes.
4. Remove the candied yams and set aside.
5. Simmer for about 5 minutes or until the syrup thickens.
6. Remove aromatics before serving, and pour the candied syrup over the yams.
