Anarsa, anarse is a snack commonly associated with festivals like Diwali. Anarsa, made with a combination of rice grains, sugar and sesame seeds is a delight to have.
Ingredients
Rice flour – 1 cup
Powdered sugar – 1/3 cup
Sesame seeds – 1 tbsp
Milk – 2 tbsp
Ghee – 1 tbsp and to fry anarsa
Directions
Making:
1. For making anarsa, combine rice flour, powdered sugar and 1 tbsp of ghee together in a mixing bowl. Then add 1 tsp of milk at a time to the flour mixture and knead soft dough. Cover and leave the dough for 30 minutes.
2. Later, dough will be ready to make anarsa. Heat enough ghee in a wok to deep fry the anarsa. Meanwhile, pinch some dough and coat it with sesame seeds. Then roll and flatten the dough a bit.
3. When ghee gets heated aptly, drop the anarsa in the wok and fry until it turns golden brown from both the sides. Don’t flip the anarsa too much with the ladle.
4. Drain out the fried anarsa on absorbent paper kept on a plate and similarly prepare the rest of the anarsa. Anarsa are ready to serve.
Serving:
5. Serve these divine and devouring anarsa along with steaming hot cup of tea or coffee.
Suggestion
Ensure that you take 1/3 rd portion of sugar/jaggery than the rice flour or else they may splatter. Keep a note that the ghee is heated aptly or this could be the reason of splattering the anarsa. Dough should be kneaded perfectly, if the dough is thin in consistency then also the anarsa will break.
