Hi, I’m Jei. In this episode, I interviewed a man from Jiangsu, China, who was once a table tennis champion. He first came to Singapore because of his athletic background, but today, he has spent the past seven years running a Chongqing noodle shop here. I actually discovered his restaurant through a friend’s recommendation. As someone from Sichuan, I could tell the flavors had been adapted a little, but it was still delicious. After chatting with him, I realized he wasn’t from Chongqing at all—he was from Jiangsu. Even more surprisingly, he used to be a table tennis champion. That made me curious: Why would someone from Jiangsu choose to open a Chongqing noodle shop in Singapore? What happened between being a table tennis champion and becoming a hawker business owner? What is it really like to run a stall in a Singapore Hawker Centre? How many hours does he work every day? Is running a food business in Singapore actually profitable? Are most of his customers locals or Chinese? What is the hardest part of the job: the physical work, the costs, or simply doing the same thing every single day? In this conversation, we talked about his personal journey and the realities of Singapore’s food industry.
