Chicken Braised in Tomato Sauce (Ga Sot Ca Chua)

Here is our version of the popular Vietnamese dish called Ca Sot Ca Chua (fried fish in tomato sauce) using chicken instead of fish. It's earthy but light. It's savory yet sweet. The tomatoes add just the right amount of sweetness, tartness and texture to make a perfect sauce, balancing out this hearty meal. Full Recipe: Ingredients: 3lb chicken drumsticks 1 can diced tomatoes 1 cup fresh tomatoes, diced 2 tsp black pepper 2 tbsp brown sugar 2 tbsp fish sauce 3 tbsp flour 2 tbsp minced garlic ¼ cup chopped scallions 1/3 cup minced shallots salt to taste parsley to garnish Instructions: 1. Start by deboning chicken drumsticks. Add flour to chicken and mix until meat has a thin coating of flour. *If you like, you can keep chicken drumstick whole. I would cook a little bit longer to make sure chicken is fully cooked in step 5. 2. Lightly fry chicken until golden brown. Remove from pan and set aside. *It’s perfectly normal to not have the chicken fully cooked at this point. We just want a nice golden color. 3. In a large pan, heat up vegetable oil. Sautee shallots and garlic for a few minutes until translucent. Add canned and fresh tomatoes. Cook for a few minutes until tomatoes break down and become a sauce. 4. Add fish sauce, black pepper and sugar to pan. Stir to mix. 5. Add chicken to pan. Stir and let simmer for 10min until chicken is fully cooked. *After 10min, chicken should be smothered in and infused with the sweet tomato sauce. 6. Stir in green onions. 7. Garnish with chopped parsley. 8. Serve stir fry with rice and enjoy!
