VEGGIE JAM - THE HISTORY & FACTS
Jam isn't just for fruit. For generations, cooks around the world have discovered that vegetables can also be slowly transformed into sweet, tangy, and deeply flavorful preserves.
The story begins with preservation. Long before refrigeration, families needed ways to keep seasonal harvests from going to waste. Sugar, vinegar, salt, and slow cooking became valuable tools for extending the life of fresh produce.
As sugar became more widely available, cooks experimented with preserving ingredients beyond berries and orchard fruits. Tomatoes, onions, peppers, carrots, pumpkins, and even eggplants could be cooked down with sugar, spices, or vinegar into spreads, relishes, chutneys, and jam-like preserves.

One reason vegetable jams work so well is slow cooking. Heat removes moisture and concentrates natural sugars and flavors, turning an ordinary vegetable into something rich enough to spread on bread, pair with cheese, or serve alongside a meal.
