Hello Amigas and Amigos in this beautiful day🫡🇵🇹 Today we’re not cooking fast. We’re not cooking fancy. We’re cooking the Portuguese way — slow, simple, and right in the middle of the table. This video is all about chouriço cooked on the assador, fueled by bagaço, surrounded by opinions, advice, and quiet moments where everyone just watches the fire🔥 This is not from my experience, but from Portuguese stories. If you know, you know😁 On the menu today: 🌭 Two types of chouriço – smoky, cured, full of character 🌭 Linguiça – milder, juicy, perfect for the flame 🩸 Morcela – dark, rich, not for beginners but loved by many 🔥 Bagaço – strong grape spirit that brings the fire (and courage) 🍷 Red wine – because silence and fire go well with wine 🍰 Natas do Céu (from Lidl) – simple dessert, sweet ending, no stress What is this cooking about: In Portugal, cooking chouriço on an assador is not just food. It’s a moment. The assador comes to the table. The sausage stays whole. No knives. No rush. No violence before cooking 😌 Someone pours the bagaço (carefully… usually). Someone lights the fire. Everyone else becomes an expert. Too hot. Too cold. Too slow. Too fast. Always too something 😄 But still — nobody touches it. About enchidos (Portuguese sausages) Portuguese enchidos are cured meats made with pork, fat, salt, garlic, spices, and smoke. They are not meant to be complicated — they are meant to be respected. • Chouriço is smoked and seasoned, firm on the outside, juicy inside • Linguiça is lighter, softer, great for gentle heat • Morcela is bold, deep, and traditional — not everyone loves it, but those who do really do I'm with them💯 Cooking them whole on the assador allows the fat to melt slowly, the casing to crisp naturally, and the inside to stay juicy without drying out.
