🇯🇲 Jamaican Fried Dumplings
Ingredients:
• 2 cups all-purpose flour
• 2 tsp baking powder
• ½ tsp salt
• 1 tbsp sugar (optional, but adds a lovely touch)
• 2 tbsp butter or margarine (cold)
• ¾ cup water or milk (add gradually — you may not need all)
• Oil for frying (vegetable or canola)

Instructions:
1. Mix Dry Ingredients:
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
2. Cut in Butter:
Add butter and rub it into the flour with your fingers until it resembles fine crumbs.
3. Add Liquid:
Gradually pour in water or milk while mixing with your hand or a spoon until a soft dough forms. The dough should be soft but not sticky.
4. Knead Lightly:
Knead the dough for about 1–2 minutes on a lightly floured surface. Do not over-knead.
5. Form Dumplings:
Divide the dough into 8–10 pieces and roll each into a smooth ball or slightly flatten into discs.
6. Fry:
Heat 1–1½ inches of oil in a deep skillet over medium heat. Once hot (about 350°F/175°C), carefully add the dumplings. Fry until golden brown on all sides, about 6–8 minutes, turning often.
7. Drain:
Remove with a slotted spoon and drain on paper towels.

• Don’t overcrowd the pan — fry in batches.
• For extra flavor, you can add a pinch of nutmeg or a splash of coconut milk to the dough.
• Best served warm!
