Lets bake super crispy and delicious Eggless Ragi & Nuts Cookies at home! Made with wholesome finger millet flour (ragi) and packed with crunchy nuts, these bakery-style biscuits are the ultimate healthy tea-time snack for both kids and adults. If you are looking for an easy, 100% vegetarian cookie recipe that stays crunchy and tastes amazing with your evening chai, this step-by-step tutorial is for you! Ingredients: Ragi Flour (Finger Millet Flour) - 100 gm Butter - 45 gm (soft or melted to semi solid) Brown Sugar - 40 gm Pistachios - 1/2 cup chopped (you can add cashews too) Baking Powder - 1/4th Tsp and a pinch of Salt Milk (if needed for binding) - Cardamom Powder - 1/2 tsp Bake at 160C for 20 min (+/-) Since these are Gluten free cookies its difficult to roll and cut. You can simply make small ball and press down to get a cookie shape. Other option as I have shown is to take your measuring spoon 1 tbsp or 1/2 tbsp sized, scoop out the dough to get a half round shape. Comes out perfectly crisp. Baking Tips for Perfect Crispiness: Ensure the oven is properly preheated before baking. Let the cookies cool completely on a wire rack; they will crisp up as they cool down. Store in an airtight container to keep them crunchy for weeks!
