Soak in water for about 2 hours. After soaking, drain water completely. Add soaked dal, green chilies and ginger to a grinder jar. Grind to a coarse paste without adding water. In a mixing bowl, add wheat flour, cumin seeds, crushed ajwain, salt, red chili, turmeric, black pepper, sesame seeds and kasuri methi/coriander. Add moong dal paste and mix well with hands. Add oil/ghee for moyan and rub into the flour until crumbly. Slowly add little water and knead a tight, stiff dough. Rest for 10–15 minutes. Take a portion of dough and roll into a medium-thick sheet (not too thin). Cut into small round or desired shapes using a cutter or lid. Prick each piece with a fork so they don’t puff while frying. Heat oil on medium, then lower the flame. Fry mathri on low-medium heat, flipping in between, until golden and super crunchy. Remove on tissue, let them cool completely. Store in an airtight container – stays crispy for up to 1 month.
